Today I’m super excited to share one of my top five favorite foods of all time and hands down my favorite breakfast. Introducing chilaquiles, it’s a popular Mexican breakfast that is typically a use for leftovers. You take leftover chips and salsa, stew them together and top with eggs. It is easy to make, only a few ingredients and unbelievably delicious! It’s also Andrew’s favorite food of all time so today we are commemorating our successful completion of the Whole 30 by making it!
If you live in a major city, you’ve probably seen this dish on a menu at a hip brunch spot. It is very popular and for good reason because they are the perfect comfort food. I will warn you, the best chilaquiles are made at diners and hole in the wall spots, those hip places always try to do too much.
I’ve kept this dish as simple as possible, it’s made with my special roasted tomatillo salsa and topped only with eggs and sour cream. You can also add avocado, cilantro and maybe cheese but I would keep it to that.
If you’re looking for something to make for a crowd this is perfect. You can buy store bought chips and salsa and have the whole thing ready in about 10 minutes! It’s also the absolute best hangover cure on the planet, try it this Sunday, your body will thank you!

Chilquiles with Salsa Verde

Description
A traditional Mexican breakfast made of tortilla chips, stewed in roasted tomatillo salsa and topped with fried eggs. The perfect breakfast and hangover cure.
Ingredients

- 4 cups roasted salsa verde (I recommend making your own but if you're doing store bought, use Herdez )
- 4 handfuls tortilla chips
- 4–6 eggs (fried or scrambled )
Toppings (Optional)
- sour cream
- cilantro
- avocado
- diced onion
- queso fresco
Instructions
- Heat the salsa in a large skillet over medium heat and bring to a simmer.
- Add the chips one handful at a time while stirring into the salsa. The salsa should cover the chips. Stir and simmer for 5-7 minutes until the chips begin to soften. Remove from the heat.
- In a separate skillet, cook your eggs. If doing scrambled, I recommend adding them directly into the chips. If fried, plate the chips and top with the eggs. Add any other toppings you like and enjoy!
