This just in people! The official Superbowl Countdown Clock is down to 2 days!! This is not a drill! If you are going to a house party for the Superbowl, you are running out of time to decide what you want to bring. So today, I bring you the answer, it is a meatless take on an extremely classic game day food, and it is also a staple in my home, Andrew’s Sweet Potato Chili with Harissa.
This recipe is a slight modification from one of the first recipes Andrew ever cooked for me. He was attempting to make a meal that I would not only love, but that he could take for lunch to work the following week, and a star was born! This recipe is flavorful, comforting, filling and healthy!
This chili is also extra special because it can be made in the Crockpot! If you’ve been following our blog this past year at all, you know already, I love my Crockpot. It is the quintessential kitchen appliance for busy people. I also slightly modified this dish to add Harissa which is an ingredient my mom adds to her chili that really takes it over the top.
What’s Harissa you may be wondering. Harissa is a very popular ingredient in Middle Eastern cooking. It’s a paste that is made from spicy chilies that you can usually find in the ethnic isle of your grocery store. It’s typically either near where the Indian cooking ingredients are, or the Italian/Mediterranean ingredients. The kind I buy comes in a small can, but I have seen it in a jar as well. Trust me, if you find it, buy it! It add the perfect smoky and spicy flavor to anything you’re making and it takes this chili in particular to the next level!

Andrew’s Sweet Potato Chili with Harissa

Description
Healthy, colorful and fully plant based Sweet Potato Chili with a special Middle Eastern kick from spicy harissa paste.
Ingredients

- 2 tbsp extra virgin olive oil
- 4 cloves garlic (minced)
- 1 red onion (finely diced )
- 1/4 cup harissa paste
- 4 sweet potatoes (peeled and chopped into large pieces )
- 4 carrots (peeled and sliced )
- 1 16oz can tomato sauce
- 1 16oz diced tomatoes
- 2 tbsp chili powder
- 1 tbsp cumin
- 2 tsps smoked paprika
- 1 can black beans (drained and rinsed )
- 1 tsp sea salt
- 1 tsp ground pepper
Instructions
- Heat the olive oil in a medium pan over medium heat. Add in the onions and garlic and cook for 3 minutes or until the onions become translucent. Add the harissa and toss until they’re coated.
- Next, pour the onions and garlic mix into a Crockpot then top with the sweet potatoes and carrots. Add in the tomato sauce, diced tomatoes, chili powder, cumin, smoked paprika and salt and pepper and toss until all the veggies are fully coated in tomatoes and sauces. Cook on low for 8 hours or high for 4 hours. Top with yogurt, sour cream, cheese, scallions, cilantro or anything else that floats your boat.
